Ingredients:
For the test:
200 g of raw beets (1 beet, or 1 cup pure beet)
Juice of one lemon
2 tablespoons vinegar
125 g sour cream
125 g butter, room temperature
200 g of sugar
2 eggs
Vanilla extract 1 tablespoon
250 g of flour
1 tablespoon of cocoa powder
2 teaspoons baking powder
For cream:
125 g butter, room temperature
250 g of cream cheese
200 g of sugar
Preparation:
1. Preheat the oven to 170 ° C. This time I cook in 10 cm forms for baking. Lubricate them with oil and dust with flour. You can use a different size, for example 2 shapes of 20 cm (the time for baking will increase).
2. I rub the beets on the smallest grater, add lemon juice and vinegar to it and send it all to the food processor, I clean everything up to mashed potatoes! In puree I add sour cream and mix it well.
3. In another bowl, beat the butter with sugar, one by one add the eggs, then the beet pulp and vanilla extract, mix until fully combined.
4. In a separate bowl, sift flour, cocoa and baking powder. I connect the dry mixture with wet and mix everything to a homogeneous state.
5. Evenly distribute the dough between the baking forms and bake for 20-25 minutes. Watch them, the ovens are different and the time can vary very much.
6. After the cakes are pulled out of the oven, leave them for 10 minutes and then lay them out of the mold on the grate until completely cooled. If the top of the cake is slightly swollen - cut it with a knife so that the surface becomes even.
7. In the meantime, we will deal with the cream. Whisk all the ingredients for the cream until smooth and slightly fluffy texture. Store in refrigerators before use.
8. When our cakes are completely cooled, we can start assembling. We exfoliate each crust with cream, cover the sides and top with it, you can dust the cake with coconut shavings or grated white chocolate.
From this test it is possible to prepare not only a cake, but also kapekeys with a cream cap, the time of preparation is reduced, be guided by your oven.
